Spagettini Alfredo

Not the traditional pasta and sauce combination but it's what I had on hand and it tasted great. Just to let you know this sauce is like amazing!! I have fooled omnis with this sauce. I got the recipe from Vegan Dad and he got it from the PPK forums. So if anyone is reading this and wants the recipes check it out.I used whole wheat pasta and I didn't add peas to mine and I would recommend either adding more soy milk or less salt or white wine be cause it can be a little salty.

Hola! It's Quesadilla Time!

So this is my lame attempt to honor my Dad's heritage with some tasty food. Anyways this was a pretty quick meal that I just threw together with the stuff I had in my fridge. So I just added some tomatoes, green pepper, red pepper, red onion, black olives and soy cheese in between to tortillas and grilled it until it was crispy brown on both sides.
The verdict on this little latin sandwich? Pretty good, would have been better with a different type of cheese. I used tofutti and it doesn't melt that well but oh well the veggies were great.For dessert a bowl of vanilla coconut ice cream. A good end to a nice meal.

Vegetarian Food Fair

This Saturday me my dad, his girlfriend and my little brother went down to the Harbor Front Centre to check the 25 annual food fair. It was really awesome and there were lots of yummy foods to try.
I don't think I've ever eaten so much food in my entire life!! It was all delicious and probably a lot healthier than the meaty versions. First we had tofu borache or something like that, mixed veggies and some re fried beans and rice. As well as some Indian potatoes and okra, channa masala and veggie lamb with spinach.I then proceeded to consume to my taste buds delight and my stomachs horror:

Coconut water
vegan brownie
vegan turkey and stuffing
Fruit cup
vegan chocolate fudge cake
vegan green tea cupcake
pizza and pasta from the magic oven
chick pea soup from the magic oven

I also ate a ton of free samples and bought a bag of chocolate chip cookies and two boxes of Boardwalk Chocolate which I nibbled on, on the way home. It's a miracle that my stomach didn't explode. On a side note I also got to meet Terry Hope Romero, co-author of Vegan Cupcakes Take Over the World and Veganomicon. She did a demo on latin anerican vegan food and afterwards she signed my copy of Vegan Cupcakes Take Over the World which was pretty cool. Over all it was a great day, even my little brother had a great time.
